my ex tried to hair removal cream stuff on me once and it burnt the crap out of me and hurt to have sex cause the skin was tender. wasn't on there for very long either.

This is what I do. I use my wife's Gillette Venus razor, found it works much better down there than my Mach 3.

Now I use an electric clipper set to a short setting and make it nicely uniformed, neat and clean without the problems of going totally shaved. No ingrown hairs, no stubble, no itching.

No, does not burn or anything. In fact it smells lovely which makes a change from normal hair removing products and there chemical smells.

Sounds like you might have given yourself a mild skin infection, it can happen anywhere on your body from shaving but down there it can happen more often.
If the itching continues for more than a couple of weeks pop into your doctors and ask for a topical anti-fungal or anti-bacterial to try.
